Go Bananas for Banana Muffins

Are you ready for the most amazing banana muffin?  The best part is there is no sugar and no flour!

I highly recommend these tasty muffins for on the go breakfast, snack or even dessert.

Banana Muffin Recipe:

2 1/2 cups of Old Fashion Oatmeal (not quick cooking oats)
2 ripe bananas
1 single serving cup of Greek yogurt 0% fat free
2 eggs
1 teaspoon of vanilla extract
1/2 teaspoon of baking soda
1 1/2 teaspoon of baking powder
1/2 teaspoon of cinnamon

place all the ingredients in a blender/food processor and blend until smooth oats and all.
spray your muffin tin with a nonstick cooking spray
heat your oven to 400 degrees and bake for about 20 min or until toothpick or knife comes out clean.

Voila!  So easy you can blink and these babies are done!


Now the picture quality is not the best but the taste is far better than the picture above oh and I know I mentioned this but No Sugar No White Flour!!

Go ahead and go crazy, add nuts or anything you might think will make them out of this world. I like to top mine with a little raw honey.

Day 2

I made it! 

That is through my first day of no sugar and no processed foods and it felt so good...

I noticed as I cleaned my pantry and fridge I needed snacks. I am a huge snacker!

As I shopped which took me a couple hours reading labels. I kept thinking what can I eat?  I was so conditioned on processed foods such as crackers, bread, snack packs and chips just a few  of my favorite things.  I was on a mission to not feel deprived but to feel satisfied so I traded in my oily processed chips for a different kind of chip.

I found this awesome snack which tastes so good and gave me the crunch of a chip.
I found my bag of Barefruit Apple Chips at Costco, I had never heard or seen this brand and yet they are so crunchy and tasty.  The best part of these apple chips, the main ingredient is apples and that is it!  Nothing processed and nothing fried. Seriously the best chip ever and so healthy.

Other healthy snacks I have been snacking on:
carrots,cucumbers and celery with hummus
nuts- raw almonds and walnuts
fresh fruits such as: 
bananas                                                         
apples with all natural nut butters
pears with goat cheese
grapes
oranges
all natural pepper jack cheese stick
                                                      Turkish apricots (no added sugar)
                                                      hard boiled eggs

I have been able to snack away and feel totally satisfied, Of course I have had sugar and chocolate cravings. It is only day 2!  But I have been able to swap my favorite treats for some of nature's finest foods.

Day 1

So my new motto is  "Take it One Day at a Time" a wise and good friend kept repeating as I told her about my new lifestyle.
  
As I started Day 1 at first I felt overwhelmed and then excited and then a feeling of freedom came over me. The freedom from processed food, sugar and anything unhealthy.  I have been battling my weight it feels like for the past 10 years trying to always lose 10 pounds well that 10 pounds turned into 20 and now multiply that by 2  I need to lose about 40 pounds.  But note this is not why I am cutting out processed sugary fatty foods.  I am doing this to change my perspective on food, life and the benefits of natural health. Think of it as an science experiment for the past 10 years I have been extremely active taking and teaching aerobics, running, working out with different boot camps but yet I have "belly fat" that will not go away? I was always on Weight Watchers eating lots of processed wheat bread and 100 calorie packs as snacks, tortillas and lots of tortilla chips with salsa thinking it was all low in points. But never really lost any weight or inches around my midsection.

So when and where did I start?

I went to my fridge and cleaned it out, anything that had sugar, cane juice, artificial sweeteners you name it I tossed it in the garbage.

All white flour and white sugars are gone, Why have them sit in my fridge and pantry to only tempt and taunt me.

I went to the grocery store and loaded up on fresh veggies, fresh fruit, nuts, nut butters, chicken, fish and eggs.

I didn't realize how much sugar is in our food, I found sugar in peanut butter. So pay attention to those labels!

Day 1 was awesome and very successful, I felt satisfied with my food choices and never felt bloated. That was huge for me, after every meal I always felt like I was gonna burst from bloat.

Fruit is my new dessert and veggies are my new snacks!

The Goudy's Go 100 Days of Clean!

The Holidays are here and I love them! Everything from cinnamon rolls, iced sugar cookies Christmas candy you name it I probably ate it, It is a glorious time of year and as I was eating the most delicious prime rib Christmas dinner my brother and I were talking about processed foods and how bad they are for you.. nice dinner conversation right?  Anyways he made a bet that if I gave up flour, sugar and all processed foods he would pay me $50.00 bucks, and as any competitive sister, I took the challenge. My sister joined in and said she would do it too and then my Brother in Law joined in as well.

 So we have four players at $50.00 a piece and a Mother we will call her Mama Sue who is betting against all her children!

The Rules are:
100 Days:
No Processed Foods
No Sugar
No Artificial Sweeteners

Easy right? 

We started December 26, 2012 at 12:01 am and will end our 100 Day Challenge on April 6th, 2013.

I am dedicating my blog to this 100 day challenge with daily menus and recipes for the flour less and sugar less.
